Food allergens, in which identify the allergen epitopes of Ara h 1 in walnut and establish the bioinformatics analysis method of food allergens.
The allergenicity assessment of food proteins and transgenic food, in which raise a modified weight-of-evidence approach for evaluating the allergenic potential of food proteins combined with the bioinformatics analysis method, serological analysis, protein digestive stability in simulative gastric and intestinal fluid, Balb/c mice sensitization model and Rat basophil leukemia (RBL) cell-based immunological assay
Mechanisms of food allergy, involving the CD4 as a key role in the process of sensitization phases, which suppress food allergy by inducing tolerance, and the Dok-1 mediated signal pathway in the effect phases of food allergy.
